I have to say, this baked ranch chicken is one of the best chicken recipes I’ve ever had. It’s so simple, and yet so delicious. The flavors are perfect, and the crunchy cornflake breading works wonderfully.

My family really enjoyed this dish, and it has definitely become a staple in our house. Sometimes, to make the chicken even juicier, I’ll soak it overnight in reduced fat buttermilk. This tenderizes the meat and also adds a bit of tang that brings out the flavors of the ranch seasoning.

This is a great low-calorie chicken recipe that can be prepared very quickly with very few ingredients and is a great dish to prepare when you are having one of those “What the heck should I make for dinner” moments. It’s one of my go-to chicken recipes that satisfies everyone, including me.

  • Preheat oven to 350 degrees F (175 degrees C).

  • Rinse and chicken breasts and pat dry. Evenly coat both sides of each breast with sour cream.

  • In a large Ziploc bag, add the cornflakes and Ranch Mix, and crush cornflakes well.

  • One by one, put each sour cream coated chicken in the seasoned cornflake crumbs and gently shake until chicken breast is coated.

  • Place coated chicken in a 9×13 inch baking dish that has been sprayed with non-fat cooking spray. Lightly mist with an olive oil mister, and bake in the preheated oven for 1 hour.

      Made this tonight. Was a little nervous on the chicken as I can’t stand chicken; but the chicken was moist and delicious. My husband was skeptical on the corn flakes but the blend was perfect for him too. The bottom of the chicken was as little gooey from the batter, may try to put them on a rack next time.

        I made the ranch baked chicken it was amazing I did everything the receipe said how is it only 5 points the chicken is none the cereal is 3 the 1packet of ranching mix is 0 and the sour cream is only 2

        No, you can just use a cooking spray instead.

      This is awesome! I often make homemade chicken fingers with the cornflakes which are quite tasty but the added ranch seasoning made them to die for!!! I was only sad that we didn’t have more. Thank you!!!

      very good! I followed the recipe except I used planko crumbs because they are my preference. Turned out well and I will make this again. Next time, I’ll plan ahead so I can soak the chicken in buttermilk overnight.

      What did I do wrong? The cornflakes just melted onto the chicken. Soggy and not crispy at all. Not very good this way.

        Yes, Panko will work just fine, but the cornflakes have a slightly better flavor.

      Could greek yogurt be used instead of sour cream? And would it change the points value?

        I haven’t tried it, but I don’t think it would affect the Points + value, since the amount is so minimal.
