I add a chopped sweet onion and it's delish. Saute the the onion in butter until clear. Also, garnish it with a dollop of cider vinegar. Serve vinegar on the side so people can add to taste.

Uncured bacon generally doesn't have sugar. However, most bacon just uses the sugar in the curing process and there isn't residual carbs. Look for a bacon that's 0g carbs per serving.

I grew up eating a variation of this (Haluski - a Slovak dish) with noodles and sour cream. We always sauteed an onion with eht bacon then added noodles and mixed in sour cream. So good. I omitted the noodles and still tasted like growing up.

i modified it a bit sauteed onion and some garlic, bacon and cabbage and carrots ( really thin, useed a peeler super easy and quick) and served it with a chili dressing ( mayonnaise, low fat yogurt, tahini organic unhulled, splash of lemon and chilli powder) ...beautiful, i was really surprised how well everything goes together.

This recipe makes 2 servings, and each serving provides 79 grams of fat. The majority of the fat comes from the bacon, while the rest comes from the butter. Bacon is about 43g of fat per 100 grams. The USDA food database is an excellent resource for looking up nutritional information. https://fdc.nal.usda.gov/

I believe that thicker sliced bacon, and then baked in the owen instead of being fried, will decrease the amount of saturated fat?

Draining the fat from the cooked bacon can help reduce the amount of fat in this recipe.
