Does your family enjoy a warm, festive breakfast? My kids love pancakes and are thrilled when I make them into fun shapes and letters. I’ve bumped the idea up a notch with this simple breakfast recipe for Reindeer Christmas pancakes. They are easy to make and look adorable! The batter is made with Greek yogurt and honey, making them sweet enough to eat with or without syrup.
Pancakes are easy to make; your kids can even help! I love teaching my kids to cook and pancakes are an easy and quick recipe to start cooking with children. If your kids are not old enough to use the stove, have them help by measuring and mixing the batter. Older kids can help you shape and cook the pancakes.

Prep the Bacon

Making the Reindeer

Once the pancakes and bacon are finished, place your reindeer components in a row and let your little elves assemble the reindeer faces. A slice of banana makes the eye-ball with a raisin or chocolate chip for the pupil. A small triangle of strawberry makes the perfect nose (I used a defrosted, frozen strawberry). If you don’t have strawberries you can use a dab of strawberry jam.

Pancakes Batter Ingredients

      • 1 cup all-purpose flour
      • 3/4 tsp baking soda
      • 1/4 -1/2 tsp salt
      • 1 tablespoon honey
      • 1 cup Greek yogurt (non-fat, low-fat or regular)
      • 1/2 cup skim milk
      • 2 eggs
      • 2 tablespoons coconut oil

Pancake Decorating Ingredients

      • Banana slices, for the eyes
      • Chocolate chips or raisins, for the eyes
      • Strawberry slices or a dab or strawberry jam, for the nose
      • Turkey bacon (cooked) for the antlers

Reindeer Christmas Pancakes Directions

1. In a medium mixing bowl combine Greek yogurt, milk, honey, eggs and coconut oil (melted). Whisk until smooth. 2. Stir in flour, salt, and baking soda. Mix until well combined. 3. Hear skillet or griddle over medium high heat and wipe lightly with coconut oil. 4. To shape pancakes into reindeer faces: pour 2 tablespoons of batter onto a hot griddle in a circle shape. Add a 1.5 tablespoon oval shape of batter to the bottom of the circle. Make 2 separate oval ear shapes, 1 tablespoon of batter for each oval.

Simple Breakfast Recipe: Reindeer Christmas Pancakes (4)2. Once pancakes are bubbly, flip and cook 2-3 minutes (until golden brown and cooked though). Remove from griddle and cover until all pancakes are cooked. 6. Cut bacon in half vertically, then horizontally.

3. Assemble the reindeer: Place a reindeer head and two ears on each plate.

4. Add two thin straight strips of bacon to the top of the reindeer head, tucking them under the pancake to stay secure.

5. Next, angle a curvy piece of bacon next to the straight piece to complete the antlers.

6. Add eyes to your reindeer with banana slices and chocolate chips or raisins.

7. Next, add a small triangle-shaped slice of strawberry or a dab of strawberry jam for the nose.
